Well, it has been a couple of weeks, and they have been some crazy weeks! We are finally moved, the weekend we moved, it was the hottest yet and we lost electricity for over 2 days. Yeah, we felt like we were going to spontaneously combust! I have been cooking, but havent' gotten to blog, so today is a make-up day. First up is the Seaweed Sables... they were OK. My husband was not a fan. There was a definite seaweed aftertaste, I think if you like sushi, then these might be for you!

| lots of seaweed! |
| Mixed together |
| Fresh out of the oven |
The next recipe is corn pancakes, not these were really good! Super easy (I had a little helper!) and quick. I also made a squash version also that was also great!
| My little angel and his funny face! |
| Sizzling away in the pan |
| All kinds of yummy corn goodness! |
My final recipe for today was the crunchy ginger cucumbers. One of my coworkers gave me some beautiful cukes from his garden and they worked perfectly! I knew I would like this, but I didn't realize how much, the cukes and just perfect with the ginger, vinegar, and a touch of red pepper. Really refreshing!

DeleteErin, what a month! Hope you and your family have settled into your new home. I missed your blog post and it is nice to see you are back! The seaweed sablés were not a big hit at our house either. Your corn pancakes look delicious, your sous chef is a real cutie pie and your pickled cucumbers look delicious, fresh and summery!
ReplyDeleteHope you will all enjoy the rest of the weekend!
