FFwD: Quatre-quarts

Even though the batter was really, really thick and I am pretty sure that I didn't beat the egg whites long enough, the cake looks good and smells divine! Instead of vanilla extract or liquor, I used almond extract and added sliced almonds (tried to toast them at first, but after burning the first batch, I just decided to put them on sans toasting!) to the top. With the almond, it tastes just like one of those Stella D'oro breakfast cookies, but in cake form, seriously yummy and will go perfectly with some coffee.

 I am very happy with this cake recipe, it was simple and can be adapted to a lot of different flavors!

  1. Almonds are a good idea. I used vanilla and cognac and it had a little bit of an almond taste which was nice.

  5. I was thinking of almond extract and sliced almonds when another FFWD mentioned using ameretto in her cake. Glad to see that the sliced almonds on top turned out so well on yours! I think it was good that you didn't toast them before baking because with 30+min in the oven, that's plenty of time for the almond to toast anyway.
