Have you ever had one of those weeks that was just blah? Well, that is my week, so I was really happy that today's recipe was simple, easy, and I already had all the ingredients. Especially since I did not even realize it was Friday until lunchtime. So, I made these potatoes to go with my leftover steak for lunch. I used Thyme and some Yukons that I already had. The broth gave the potatoes a good flavor and I like the idea of braising them, I foresee some experiments with spices coming!

DeleteSo you're soaking some potatoes in the broth overnight too? That sounds like a great idea to get more flavour into the spuds. I'll be interest to know how you like them tomorrow!

DeleteI have a lot of those weeks - I know what you mean. That lunch looks quite tasty. I used the leftover potatoes with a steak salad and they were good the second day. I thought that it was a good method to spice up potatoes to your liking. Hope you experiment with them and let us know how you like them with spices!

DeleteWow - can't believe you knocked that out for lunch ! One mighty nice looking lunch :) We enjoyed these way more in frittata form and I am embarrassed to say how quickly my family wolfed down Nana's frittata....it is like I never feed them :) They at least get fed on French Fridays.....
