FFwD: Cocoa Sables

After a wonderful vacation week where someone else cooked, I am back to cooking and baking! The Irish Soda Bread earlier this week was a huge hit, so much so that my hubbie requested it again! This time I made two loaves, one regular and one with an additional 1 1/2 cups sharp cheddar cheese, oh my gosh, it is amazing!!! I have to post a picture!

I love cheese bread, so I am super excited to be able to make it!! 

Anyway, back to the wonderful cookies we made this week. This is the first time I made sables or any kind of shortbread, it was surprisingly easy. The dough was really crumbly, but I was able to roll it nicely in the plastic wrap into logs.

After putting them in the freezer for awhile, they were ready to cut! I did some pretty uneven rolling in sugar and started cutting. The only issue I had was that my knife kept catching on the big (didn't quite cut them small enough) pieces of chocolate and breaking the cookies!

End result, not the prettiest cookies I have made, but so yummy! Not too sweet, super chocolaty, perfect for a decadent snack!

  3. I made the soda bread last night by request... this time I added half whole wheat flour and cut up prunes to go in it.
    The cookies look good :-)

  4. I'm going to have to give the soda bread another go I think. The cheese addition sounds great! The sables kind of snuck up on me. I didn't really like them that much at first but I ate two yesterday afternoon for a snack and was very pleased. Might be changing my mind...

  5. I was actually going to make my forth loaf of soda bread today…I love having it for breakfast. Yours looks gorgeous…and love your cookies, they look delicious! I have been enjoying mine with my afternoon tea!

  6. The sablés look great and very delicious. Even though Tricia and I are no longer with
    Baking on Tuesday's, I had made the Irish soda bread early on. I found it to be very
    nice, loved the taste, but making it with the cheese scrumptious. I think I may
    try that soon. Nice job on both of your recipes.
