FFwD: Lemon Barley Pilaf

I had not used barley before for anything other than beef and barley stew, so I was excited to try this. It turned out really good, I had a good amount of liquid, so I decided to treat it like risotto and add in some Parmesan cheese, it added a great taste and thickened it up nicely!




I will definitely use barley like this again, such a quick and versatile recipe!

  1. I think barley stew is how barley usually shows up in our house too :-) It's great to find other uses for such a versatile grain, isn't it?

  4. Looks delicious, I like the sound of adding the cheese, it needed a little extra flavor and I think that would do it.

  5. But, Erin, did that little guy like this? My money is on the affirmative and your adding the cheese probably pushed it over the top. I went with the Bonne Idea and made a cold salad but I, too, enjoyed working with barley for the first time so will return again to it. I just have used it for Barley Soup but warm, with parmesan, sounds (and your's looked) tasty.

  6. "Barley Risotto with Parm" sounds good to me - I actually made the Lemon Barley Pilaf yesterday (again) - we love barley and it is nice to see people experimenting with Dorie´s recipes - nicely done!
